Cut a 1/2 Inch of ham into 3 pieces, allowing 2 pieces per serving. Rub each piece with dry mustard. Layer the ham in a deep baking dish. Sprinkle each layer with a light dusting of brown sugar, tiny pinch of curry powder, and 1/3 cup of dry bread crumbs. Pour into baking dish, enough buttermilk to cover all the layers. Set in refrigirator overnight. Cook casserole very slowly, about 4 hours at 300 degrees Lower heat if it starts to boil over.
Background: The buttermilk acts as a tenderizer and adds extra zest. It was very plentiful on the ranch. Home-cured has was dry and tough, sometimes too salty. This was grandma's washday supper, because it didn't take any extra time and the laundry got done!
